1 pound Yukon Gold potatoes
3/4 pound broccoli crowns, chopped (4 cups)
3/4 cup shredded fontina cheese
1/2 cup nonfat mild
1/2 teaspoon salt
Pepper to taste
Steam potatoes and broccoli. Mash coarsely with potato masher. Add cheese, milk, salt and pepper.
I'm watching over ill and elderly neighbors. So, I decided to cook for them this week. Today I made Potato Corn Chowder. It's a hearty meal as the temps drop and I continue to shovel snow.
